To begin making the sesame tamarind potato sabzi, heat oil in a heavy-bottomed pan.
Once the oil is hot, add ginger paste and chopped green chillies. saute them for a minute, taking care not to burn them.
Add sesame seeds to the pan and saute them for a while until they release their aroma.
Add the potatoes to the pan and toss them for about 2 minutes to coat them with the spices.
Sprinkle red chilli powder, cumin powder, coriander powder, garam masala, and salt to taste. mix well.
