Preheat the oven to 200ÔøΩc. line a baking tray with foil. in a bowl, mix 1 tablespoon of vegetable oil with turmeric powder. coat the cauliflower with the oil and turmeric mixture. transfer the cauliflower to the prepared baking tray and bake for 15 minutes.
Meanwhile, heat 3 tablespoons of vegetable oil in a heavy-bottomed saucepan over medium heat. add the onions and fry for 10 minutes until they begin to change color and soften. add the garlic and ginger paste, stir well, and cook for 1 minute.
Now, add turmeric powder and chili powder to the onion mixture. fry the paste for a moment and then add the passata and tomato puree. cook for 7-8 minutes until the oil starts to separate from the sides.
Reduce the heat to low and season the mixture with salt to taste. add the baked cauliflower and frozen green peas to the saucepan. stir well to coat the cauliflower and peas with the tomato gravy. cover and simmer for 2 minutes.
Turn off the heat and sprinkle garam masala and fresh coriander over the dish. serve the spiced cauliflower and peas sabzi with rotis and raita.
