To prepare the sweet and sour pineapple chicken, start by heating 2 tablespoons of extra virgin olive oil in a pan.

In a small bowl, mix 4 teaspoons of corn flour with 4 teaspoons of water to create a cornstarch slurry.
In a separate saucepan, combine 3/4 cup of pineapple chunks, 1/4 cup of pineapple juice, salt to taste, 3 tablespoons of demerara sugar, 3 tablespoons of vinegar, and 1/4 cup of chicken stock. stir well and bring it to a simmer.
