To prepare the nutty pumpkin and spinach pasta, start by boiling the spaghetti until it is al dente. once cooked, drain and run the pasta under cold water to prevent further cooking. drizzle some olive oil over the spaghetti and toss to coat. set it aside.
In a saucepan, heat 2 tablespoons of olive oil. add the garlic cloves and saut„© for a few seconds until fragrant.
Add the diced pumpkin to the pan, along with a pinch of salt and a sprinkle of water. cover the pan and cook the pumpkin until it becomes tender.
Uncover the pan and continue cooking the pumpkin until it is fully cooked and slightly roasted.
Stir in the red chilli flakes and dried herbs, and saut„© for a few seconds to infuse the flavors.
