Preparing tinda: begin by washing and cutting the tender tindas (indian round gourds) into small pieces.
Pressure cooking tinda: in a pressure cooker, add the tinda pieces along with a pinch of salt and 2 tablespoons of water. cook them until two whistles.
Releasing pressure: place the pressure cooker under running water to quickly release the pressure. set aside the cooked tinda.
Tempering the dish: in a separate pan, heat the cooking oil. once the oil is hot, add mustard seeds and cumin seeds. allow them to crackle for about 10 seconds.
Adding flavor: add curry leaves and the cooked tinda to the pan. season with salt and incorporate all the other spices and ingredients, except for peanuts and fresh coriander.
