To create the kerala pumpkin and coconut curry variation, start by making a spice paste. in a mixer grinder, blend together fresh coconut, cumin seeds, and green chili into a fine paste. if needed, add a little water to achieve the desired consistency. set the paste aside.
In a heavy-bottomed pan, combine the chopped green pumpkin with a small amount of water. season with salt and turmeric powder. cover with a lid and cook until the pumpkin becomes tender yet firm. stir occasionally to ensure even cooking and allow the water to evaporate.
Once the pumpkin is cooked, add the coconut and spice mixture to the pan. let the curry cook for approximately 4-5 minutes over low heat, until a delightful aroma fills the air.
Taste the curry and adjust the spices to your liking.
When the curry is ready, turn off the heat.
