To start preparing the khatti meethi tindora sabzi, first steam the ivy gourd in a steamer or a pressure cooker.
If using a pressure cooker, cut the ivy gourd into rounds or slices and place them inside the cooker with a sprinkle of salt and 2 tablespoons of water.
Cover the pressure cooker, put the weight on, and cook the ivy gourd until you hear two whistles.
After two whistles, turn off the heat and release the pressure immediately by running the cooker under cold water.
This will prevent overcooking and retain the nutritional content of the vegetable.
