To create the beetroot and bitter gourd masala sabzi, we'll start by preparing the vegetables.

Steam the grated beetroot and sliced bitter gourd until they become tender. you can use a steamer or a pressure cooker without a whistle. set aside the steamed vegetables.
Heat a tablespoon of sunflower oil in a pan. add the sliced onions, minced ginger, and minced garlic. sautËúÖ over low to medium heat until the onions turn tender and the raw aroma disappears.
Stir in the tomato puree and the dry spices, including turmeric powder, dry mango powder, garam masala, coriander powder, salt, and red chilli powder. cook until the tomato puree is partially cooked.
