To make pumpkin and rice congee, start by combining raw rice, vegetable broth, salt, and a small piece of ginger in a saucepan.
Add the pumpkin cubes to the mixture and stir to combine.
Cook the mixture covered over low to medium heat for approximately 30 to 40 minutes, or until the rice becomes soft and reaches a mushy consistency.
Check the seasoning and adjust with freshly ground black pepper to taste.
Just before serving, add a generous handful of chopped spring onions and fresh coriander leaves.
