Using a mandoline or a knife, thinly slice the cucumbers into 1/4-inch thick rounds. place the cucumber slices in a fine-mesh strainer set over a large bowl. sprinkle sugar and salt over the cucumbers and toss gently to combine. let them stand at room temperature for 30 minutes.
Discard any liquid collected in the bowl and wipe it dry. transfer the cucumbers to the bowl and add the red onion, white wine vinegar, fresh dill, and black pepper. toss everything together to coat the cucumbers evenly. let the salad marinate at room temperature for 15 minutes. serve immediately or refrigerate for up to 3 days.
