To prepare the cluster beans and pumpkin stir-fry, start by heating a small wok and toasting the fennel seeds until lightly fragrant. let them cool, then crush them coarsely using a mortar and pestle or a rolling pin.
In a pressure pan or wok, heat oil and add mustard seeds. once they splutter, add cumin seeds, fenugreek seeds, red chillies, and asafoetida (hing).
Stir in the crushed garlic and chopped onion, and saut„© for a minute until the onion turns translucent.
Add the cluster beans and pumpkin pieces to the pan.
Season with turmeric powder, coriander powder, dry mango powder (or tamarind pulp), and the crushed fennel seeds. mix well to coat the vegetables with the spices.
