Start by cooking the basmati rice. rinse the rice thoroughly and cook it with coconut milk, lemongrass stalks, fresh ginger, turmeric powder, and a pinch of salt. once cooked, remove the lemongrass stalks and set the rice aside.
In a wok or large pan, heat the vegetable oil over medium-high heat.
Add minced garlic and ginger to the hot oil. sautËúÖ until fragrant.
Add diced onions, red bell pepper, and green chili to the pan. stir-fry the vegetables until they become tender and slightly caramelized.
Stir in the cooked basmati rice and mix well with the sautËúÖed vegetables.
