To start making the spicy tofu and vegetable rice bowl, rinse the rice and set it aside for 15 minutes.
Parboil the rice by adding the bay leaf and a pinch of salt. drain the rice and spread it on a colander. sprinkle ground cinnamon over it and let it air dry.
In a wok or kadai, heat the required oil and shallow fry the tofu cubes until they turn golden brown on both sides. remove them and set them aside.
In the same wok, add more oil if needed. when the oil is hot, add chopped garlic and saut„© for a few seconds.
Add chopped spring onions and regular onions, and saut„© until the onions become soft.
