To begin making lemongrass coconut vegetable rice, heat oil in a heavy-bottomed pan. add ginger and all the vegetables (green beans, carrot, broccoli, and peas) to the pan and saute for a minute.
Add the rice to the pan and stir well for a few seconds.
Pour coconut milk and water into the pan. add the lemongrass stalk and black peppercorns. season with salt according to your taste.
Allow the rice mixture to come to a boil.
Once it starts boiling, reduce the heat to low, cover the pan, and let the lemongrass coconut vegetable rice cook until the liquid is absorbed, and the rice becomes tender.
