To prepare jackfruit coconut delight dumplings, start by boiling the jackfruit. in a kadai, cook the chopped jackfruit with 1/2 cup water over medium heat for about 20 minutes until it becomes soft.
Allow the cooked jackfruit to cool down, then transfer it to a mixer-jar and grind it into a smooth puree. set it aside.
Next, make the coconut milk by blending the grated coconut with 1/2 cup of water in a grinder until smooth. strain the mixture to obtain the first extract of coconut milk.
Repeat the process by adding more water to the coconut and extracting the second extract of coconut milk. set both the first and second extracts aside.
To make the rice dumplings, combine rice flour, salt, sunflower oil, and 2 tablespoons of the jackfruit puree in a mixing bowl. add water gradually and knead the mixture into a firm dough. let it rest for 20 minutes.
