To prepare the baked coconut fish delight, marinate the fish fillets in a mixture of lemon juice and oil in a mixing bowl. allow the fish to marinate for 1 hour in the refrigerator.
Preheat the oven to 350 degrees fahrenheit (175 degrees celsius).
In a frying pan, heat 1/4 cup of oil and fry the onions until they turn golden.
Add minced garlic, ginger, and chopped green chilies to the onions. stir for 2 minutes until the aromas release.
Now, add the sliced tomatoes, coriander powder, cumin powder, red chili powder, turmeric powder, ground fennel, and salt according to taste. fry for 3 to 4 minutes until the tomatoes become tender.
