To begin making creamy chayote curry, wash and rinse the red lentils (masoor dal).
Meanwhile, peel and dice the chayote squash into small pieces.
In a pressure cooker, combine the red lentils, chayote squash, diced tomatoes, cumin seeds, turmeric powder, and a pinch of salt. add enough water to cover the ingredients.
Pressure cook for about 3 whistles or until the lentils and chayote squash are soft and well-cooked. turn off the heat and let the pressure release naturally.
In the meantime, prepare the creamy coconut mixture. blend the coconut milk, coconut cream, and black pepper powder in a blender until you get a smooth and creamy mixture. set it aside.
