To start preparing the tangy coconut okra delight, heat oil in a preheated pan and add lady's finger (okra).
Sprinkle salt to taste and stir-fry the okra until it becomes soft and nicely roasted.
Cover the pan and cook the okra, stirring occasionally for even cooking.
Meanwhile, let's roast the spices for the curry. in another preheated pan, add fenugreek seeds, cumin seeds, coriander seeds, sesame seeds, rice grains, dry red chillies, and garlic. stir them for 3 to 4 minutes until well roasted.
Once the spices are roasted, add coconut to the pan and continue to roast for another 2 minutes until the coconut turns light golden in color. turn off the heat and let it cool.
