To prepare the coconut delight rice pudding, bring a pot of water to a boil, add rice flakes (aval), and immediately turn off the heat. allow the rice flakes to soak for 30 minutes.
Drain the water from the rice flakes, rinse them in cold water 2-3 times, and then strain. set them aside.
In a small bowl, soak the grated date palm jaggery in 1/2 cup of clean water until it melts completely. strain the syrup through a fine sieve to remove any impurities and set it aside.
Heat 2 tablespoons of clarified butter (ghee) in a pan and add cashew nuts, raisins, and grated coconut pieces. fry them until they turn golden brown, then set them aside.
In the same pan, add 1 tablespoon of ghee and saut„© the soaked rice flakes for a minute.
