To create the coconut-infused carrot raita, begin by washing and peeling the carrots. grate them finely and set aside.
In a grinder, blend the fresh coconut kernel, green chilli, and a sprig of fresh coriander leaves to form a smooth paste.
In a mixing bowl, combine the grated carrots with the coconut paste.
Add the yogurt (curd) to the mixture and gently fold everything together. season with salt according to your taste preferences.
For the tempering, heat a teaspoon of sunflower oil in a small pan.
