Wash the raw brown rice and regular rice thoroughly under running water. soak them together in enough water for about 6-8 hours or overnight. drain the soaked rice.
Grind the soaked rice to a smooth batter using a little water. the batter should have a slightly coarse texture.
In a large mixing bowl, combine the rice batter, grated fresh coconut, and live culture starter (yogurt). mix them well to create a uniform mixture.
Cover the bowl with a clean cloth and allow the mixture to ferment in a warm and undisturbed place for approximately 8-10 hours or until it turns slightly sour and bubbles form on the surface.
Once the batter is fermented, add coconut sugar and a pinch of salt. mix thoroughly until the sugar is dissolved and the batter is well combined.
