To prepare the coconut-infused green moong curry, start by soaking the green moong sprouts in water for about 20 minutes to remove their skin. gently rub the sprouts to peel off the skin.
Once the moong sprouts are ready, heat a kadai or wok with a teaspoon of oil. add mustard seeds and let them splutter, then add curry leaves.
Introduce finely chopped onions, jaggery, and a pinch of salt to the kadai. stirring occasionally, cook the onions over low heat until they turn golden brown.
Now, add the peeled moong sprouts, tamarind paste, and turmeric powder. mix the ingredients well, then cover the kadai and let them cook on low flame for approximately 5 minutes.
After 5 minutes, open the lid and pour in 1 cup of water into the mixture.
