In a mixing bowl, whisk the curd until smooth. add black salt, roasted cumin powder, and regular salt. mix well to combine.
Add grated carrots, chopped coriander leaves, mint leaves, and finely chopped green chilli to the whisked curd. mix everything together.
Set the carrot-spiced curd aside.
To prepare the tempering, heat oil in a pan over medium heat. add cumin seeds, chopped garlic, and a pinch of asafoetida. saute until the garlic turns golden brown.
Turn off the heat and allow the tempering (tadka) to cool slightly.
