To begin making the coconut-infused eggplant and drumstick curry, pressure cook the drumstick in about 1/4 cup water, a pinch of salt, and a little turmeric powder for about 2 whistles.
Allow the pressure to release naturally, and then set the cooked drumstick aside.
Heat a skillet and dry roast the coriander seeds and split urad dal until they turn golden brown. let them cool down.
In a mixer, blend the roasted ingredients along with grated fresh coconut, dried red chillies, tamarind pulp, and jaggery. add a little water and grind it into a smooth paste.
In the same skillet, heat some oil, and add mustard seeds and urad dal. allow them to splutter on low heat.
