To create the coconut infused vegetable medley, start by pressure cooking the yellow moong split and all the vegetables (except green peas) with water in a pressure cooker for 1 whistle.
Allow the pressure to naturally release on its own.
While the vegetables are cooking, prepare the coconut paste. grind the fresh coconut along with turmeric powder and dry red chillies into a smooth paste. set this paste aside.
Once the pressure has been released from the cooker, return it to the heat. add the prepared coconut paste along with 1/2 cup of water.
Adjust the salt according to taste, and introduce the green peas and tamarind water into the mixture.
