To begin making the coconut-infused drumstick and cucumber stew, prepare all the ingredients and set them aside.
We will start by roasting the ingredients to be ground into a masala. in a small skillet, roast red chillies and coriander seeds until they release their aroma and turn slightly darker.
Grind the roasted red chillies and coriander seeds with fresh grated coconut to make a smooth paste. add a little water if needed for grinding.
In a pressure cooker, heat oil and saute crushed garlic for about 10 seconds.
Add the mangalore cucumber and drumstick pieces along with tamarind water.
