To create the coconut infused mixed vegetable stew, start by using a blender to coarsely grind fresh coconut and dried red chilies together. set this coconut paste aside for later.
In a pressure cooker, rinse and cook the toor dal split until it's completely tender.
In a pan or kadai, cook the mixed vegetables until they are thoroughly done.
After the vegetables are cooked, incorporate the cooked toor dal into the mixture and combine them well.
Let the vegetables and dal cook together for about 5 minutes. then, introduce the coconut paste to the mixture.
