To prepare spicy carrot peanut raita, start by roasting the peanuts and red chillies in a small pan over medium heat until the peanuts turn golden.
In a large bowl, whisk the curd until you achieve a creamy consistency.
Add the grated carrots, prepared roasted peanut and red chilli spice mix, kashmiri red chilli powder, and salt to the curd. mix everything well.
If the raita is too thick, you can add a little water to adjust the consistency according to your preference.
Refrigerate the spicy carrot peanut raita for an hour to enhance the flavors.
