In a heavy-based pan, pour the milk and gently heat it. alternatively, you can preheat the milk in a microwave-safe jug and then transfer the hot milk to the pan.

Add the rice and green cardamom pods to the milk.

Slowly bring the milk to a boil, then reduce the heat and simmer rapidly. stir occasionally to prevent the rice from sticking to the bottom of the pan. continue simmering until the milk is reduced by about half. this process may take around 1 to 1.5 hours.

While the milk is simmering, roughly chop the pistachio nuts.

Once the milk has reduced by half or more, remove and discard the cardamom pods.
