In a mixing bowl, whisk together coconut milk, brown sugar, and chia seeds. ensure that the ingredients are well combined. cover the bowl and let it sit overnight or for at least 4 hours in the refrigerator to allow the chia seeds to absorb the liquid and thicken the pudding.

Prior to serving, prepare the mango components. take one mango and blend it into a puree using a blender or food processor. add cardamom powder to the mango puree and mix well. chop the second mango into small bite-sized pieces.

In individual glasses or bowls, create layers of the chia pudding and mango puree. start with a layer of chia pudding, followed by a layer of mango puree, and repeat as desired. finish by topping the pudding with dry roasted coconut flakes and the chopped mango pieces.
