To prepare the coconut-lover's rice, heat a tablespoon of coconut oil in a heavy-bottomed pan or wok.
Add mustard seeds to the oil and let them crackle. then, add urad dal, chana dal, and peanuts.
Once the dals begin to brown, add green chilies, curry leaves, and ginger. saute for a few minutes.
Add grated coconut to the pan and mix well. stir continuously to remove any moisture in the coconut and cook until it becomes dry.
Stir in the cooked rice and salt, ensuring all the ingredients are well combined.
