Begin by washing the basmati rice thoroughly and soaking it in water for about 20 minutes. in 4 tablespoons of warm water, soak the saffron strands and set them aside.
Take a pot and add jaggery, fennel seeds, cinnamon stick, crushed cardamom, and 1 cup of water. mix well and let it cook for approximately 10-15 minutes. then, add 2 pinches of salt and the soaked saffron. give it a good mix.
Heat ghee in a kadhai and add cashews, almonds, and raisins. fry them until the raisins puff up and the cashews and almonds turn light brown. remove the dry fruits from the kadhai and set them aside.
In the remaining ghee, add the soaked rice along with 1 cup of water. cover with a lid and cook the rice until all the water has been absorbed. the rice may seem slightly undercooked, but we will further cook it in the jaggery syrup.
Pour the jaggery syrup into the kadhai with the rice. let it cook for approximately 6-8 minutes or until the rice absorbs the jaggery syrup. add the fried nuts and give it a good mix. cook for an additional two minutes and then turn off the flame.
