To prepare spiced bitter gourd and potato delight, start by washing and cubing the bitter gourd. add a little salt, mix, and set it aside for 10 minutes. this step helps reduce the bitterness of the bitter gourd.
Similarly, wash, peel, and cube the potatoes. place them in a bowl of water and set aside.
Heat a heavy-bottomed pan and dry roast the urad dal, dried red chilies, coriander seeds, and fenugreek seeds until they become aromatic.
Grind the dry roasted spices along with the grated coconut and tamarind extract to create a coarse mixture using a hand blender.
In the same pan, heat oil over medium flame, add the mustard seeds, and let them splutter.
