To prepare the karela muthia (bitter gourd dumplings), wash the bitter gourds and grate them along with the peel.
Squeeze the grated bitter gourd to remove excess water content and collect the greens in a mixing bowl.
Add gram flour, rice flour, jowar flour, ginger, garlic, green chili paste, baking soda, turmeric powder, cumin powder, garam masala powder, and salt. mix everything using a hand whisk.
Slowly add a little water and knead to make a firm dough.
