Wash the bitter gourds thoroughly and pat them dry with a paper towel. cut off the ends and slice them lengthwise into thin strips.
In a bowl, sprinkle the bitter gourd slices with salt and let them sit for about 15 minutes. this helps to reduce the bitterness of the vegetable.
After 15 minutes, rinse the bitter gourd slices under cold running water to remove the excess salt. gently squeeze out any excess water.
In a separate bowl, mix turmeric powder, red chili powder, and amchur powder to create a spice blend.
Coat the bitter gourd slices evenly with the spice blend, making sure each piece is well-covered.
