Begin by preparing the bitter gourd. cut off the ends and slice them lengthwise. remove the seeds.

Do not remove the skin, as it contains important nutrients.

In a pressure cooker, add the sliced bitter gourd along with 3 tablespoons of water, salt, and turmeric powder. pressure cook for three whistles.

Once the pressure is released, open the cooker and set the cooked bitter gourd aside.

Heat oil in a heavy-bottomed pan or kadhai.
