To prepare the udupi style coconut-tamarind amaranth curry, wash the amaranth leaves and tender stems thoroughly and finely chop them.
Soak the tamarind in 1/2 cup of water for about 30 minutes to extract its pulp.
In a blender, grind together fresh coconut, red chilies, green chilies, mustard seeds, and cumin seeds to form a thick and smooth paste.
Heat 1 teaspoon of oil in a heavy-bottomed pan, and add the ground coconut-spice paste. cook until the raw smell disappears.
Add the chopped amaranth leaves and saute for approximately 5 to 7 minutes until they are tender.
