To begin making the coconut prawns curry recipe, start by roasting the grated coconut in a wok/kadhai over medium flame. stir it frequently to avoid burning until the coconut turns light brown.
Once the coconut is lightly browned, add coriander seeds, dried red chilies, a few curry leaves, 2/3 of the shallots, cumin seeds, fenugreek seeds, and turmeric powder. continue roasting until the coconut mixture turns deep brown in color. remove it from heat and let it cool.
Once cooled, blend the roasted coconut mixture in a blender to form a fine powder.
Add tamarind pulp and a little water to the blender and blend until it becomes a smooth paste.
In the same wok/kadai, heat coconut oil. when the oil is hot, add mustard seeds and let them splutter.
