To create the amaranth greens and lentil stew, start by washing and soaking the toor dal for 30 minutes.
Boil the toor dal with 2 cloves of garlic, turmeric, and cumin seeds using a pressure cooker for 3 whistles.
Once the dal is cooked, whisk it to a smooth texture using a ladle.
Add the diced tomatoes, chopped amaranth leaves, and pressure cook for an additional whistle.
To make the masala, roast the ingredients mentioned in the table (except coconut and tamarind) with a little oil until aromatic. set aside.
