To prepare the udupi style red rice sevai, wash the red rice and soak it in enough water overnight. drain the water the next morning.
In a mixer grinder, grind the soaked red rice along with grated fresh coconut, salt, and a little water. grind until you get a thick and tight dough-like consistency. transfer the dough to a bowl.
Divide the dough into four equal portions and knead each portion until soft.
Heat water in a steamer and bring it to a rolling boil.
Grease a steamer plate with a little oil.
