Heat 2 tablespoons of sesame oil in a pan. once the oil is hot, add minced garlic and saute for a few seconds.
Add chopped celery to the pan and saute for a few seconds.
Now, add the vegetables (green capsicum, broccoli florets, orange carrot, red bell pepper) to the pan. saute on high heat for 3 to 4 minutes, ensuring the vegetables remain slightly crunchy.
Once the vegetables are cooked, add half of the spring onions (save the other half for later) and mix well.
Add the cooked basmati rice, black pepper powder, rice vinegar, and spicy chili sauce to the pan. season with salt according to your taste. mix all the ingredients well until the spices are evenly blended.
