Prepare the homemade garam masala by grinding all the garam masala spices in a clean coffee grinder or spice grinder until finely ground. store the garam masala in a tightly lidded jar, away from heat and sunlight. this recipe yields approximately three tablespoons of garam masala.
For the pilau rice, start by washing the basmati rice in several changes of water, then drain. place the rice in a bowl, cover it with water, and let it soak for 30 minutes. drain the soaked rice again.
Peel and grate the ginger finely.
Heat the olive oil in a heavy-based pan with a tight-fitting lid over medium-high heat. once the oil is hot, add the mustard seeds to the pan.
As soon as the mustard seeds begin to pop (which should happen within seconds), add the green chili, diced potato, carrot, and green beans. stir well to combine.
