To prepare the momo dough, mix all-purpose flour and a pinch of salt in a large mixing bowl. gradually add water and knead to form a smooth, non-sticky dough. knead for about 5 minutes until the dough becomes elastic. seal the dough in a ziplock bag and let it rest for at least 10 minutes.

While the dough is resting, prepare the vegetable filling. heat a saucepan with vegetable oil and add minced ginger, garlic, chopped red bell pepper, and broccoli. season with red chili sauce, salt, and black pepper powder. cook the vegetables until they are tender. stir in chopped spring onions and saut„© them well. set the filling aside to cool.

Once the dough has rested, divide it into small lemon-sized portions. dust the portions with flour and roll them out into thin circles.

Take a rolled dough circle and place a spoonful of the vegetable filling in the center. fold the circle in half to create a half-moon shape, and pinch and fold the edges to seal the momo.

Heat a saucepan with vegetable oil and place the momos carefully. add a ladle of water or vegetable stock to the pan and immediately cover it with a lid. steam the momos for 10 minutes until they are fully cooked.
