In a bowl, mix the vegetables, yogurt, ginger-garlic paste, lemon juice, salt, and grated onions. set aside.
Heat oil in a pan and add the onions. stir-fry until they turn light brown.
Add the ground masala (prepared in the next step) and saute until well mixed. then, add the vegetable mixture to the pan.
Bring the mixture to a boil, then reduce the heat and simmer for 3-4 minutes.
Serve the spicy vegetable kolhapuri hot.
