To begin making the spicy vegetable idiyappam, heat a pan with oil and add grated ginger and garlic. stir well for 30 seconds over low heat.
Add shallots to the pan and saute them until they turn transparent.
Stir in the vegetables, including red chillies, and continue cooking over low to medium heat until they become fork-tender.
Sprinkle salt and mix well.
Cook the idiyappam separately according to the package instructions and set it aside.
