Preparing the masala paste: in a small saucepan, heat a teaspoon of ghee. add chana dal, urad dal, and fenugreek seeds. fry them on low to medium heat until golden and aromatic.
Stir in the coriander seeds and mustard seeds. saute for a minute until fragrant.
Finally, add the red chilies and fresh coconut pieces. saute well and transfer to a plate to cool to room temperature.
Grind the cooled ingredients into a thick paste by adding enough water. set it aside for later use.
Preparing the flavorful vegetable sambar rice: wash the rice and dal thoroughly and soak them in water for 20 minutes. drain the water and add them to a pressure cooker along with chopped vegetables (carrots, potatoes, beans, bottle gourd, etc.), turmeric, and about 4 cups of water.
