To prepare the cheesy pan-fried rice balls, heat olive oil and butter in a heavy-bottomed pot over medium heat.

Once the butter melts, add diced onion and saute until soft for about 4-5 minutes. add the rice and stir to coat it with the oil.

Pour 5 cups of water and 1 teaspoon of salt into the pot with the rice. cover and cook until all the water has been absorbed by the rice.

Stir in the corn and cook covered for another 5 minutes to ensure the rice is fully cooked and has absorbed all the water.

Allow the rice mixture to cool.
