To prepare the spicy red pesto & roasted tomato spaghetti pasta, start by deseeding the red chilies and soaking them in warm water for about 15 to 20 minutes.
While the chilies soak, roast the pine nuts (or walnuts) until they become aromatic, which takes a couple of minutes on medium heat. set them aside.
Preheat your oven to 180Êû≥c.
Cut the red plum tomatoes into quarters and season them with salt and pepper. drizzle some olive oil over the tomatoes.
Spread the seasoned tomatoes in a single layer on a baking tray and roast them in the oven for approximately 30 minutes or until they become tender and slightly charred.
