How To Cook?

Wash the potatoes thoroughly and place them in a pressure cooker. add enough water to cover the potatoes and sprinkle some salt. close the cooker and cook for 3 whistles. reduce the heat and simmer for an additional 5 minutes. allow the pressure to release naturally. once the potatoes are cooked, drain them and let them cool. peel off the skin and set aside.

In a blender or food processor, add fennel seeds, red chili flakes, and garlic cloves. blend until you have a coarse puree.

Heat olive oil in a pan or kadai over medium heat. add the ground masala mixture and saute for about a minute to release the flavors.

Add the cooked potatoes to the pan, along with salt to taste. toss the potatoes well in the masala mixture and continue cooking until they turn golden and crispy.

Serve the spicy roasted garlic potatoes as a delicious side dish or snack.
