To prepare the roasted brinjal yogurt chutney, start by roasting the eggplant.

Roast the eggplant directly on the stove or use a griddle for slow roasting. drizzle a tablespoon of oil over it.
Continuously turn the eggplant to ensure even roasting until it becomes soft and the skin starts to peel off.
Remove the eggplant from heat and let it rest for a couple of minutes.
